[Case Study] Gangneung BNC - CCP Integration

Gangneung BNC,
together with Innobase, built a smart HACCP system that uses IoT devices to measure and collect data on the CCPs (metal detector, oven temperature) established during HACCP certification, enabling real-time management.

Case Overview

The key to HACCP certification and management is establishing and managing CCPs. Smart HACCP means introducing IoT devices that can measure the CCPs defined during HACCP certification, so the resulting data can be collected and managed. At Gangneung BNC, the metal detector and oven temperature were designated as CCPs, and each was integrated with the system.

Metal detector, one of Gangneung BNC's CCPs
The metal detector — one of Gangneung BNC's CCPs.
Installing the communication module for the metal detector's detection history
A communication module was installed on the metal detector to transmit its detection history to the system in real time.
Confirming real-time system integration of the metal detection history
Checking that the metal detection history is being synced to the system in real time.
Probe-type temperature sensor inside the oven
A probe-type temperature sensor inserted into a small opening to measure the temperature inside the baking oven.
Two probe-type temperature sensors for oven control
Pulling out the probes revealed two probe-type temperature sensors installed for oven control.
Terminal box for a 3-wire PT100 type temperature sensor
Opening the terminal box confirmed that the temperature sensor is a 3-wire PT100 type. A sensor matching the existing sensor's specifications was prepared for integration with the IoT device.
Installing the IoT device for oven temperature integration
An IoT device was installed to feed the oven's temperature data into the system, and a separate probe-type temperature sensor was connected to verify that the readings were correct.
Verifying temperature logging and calibration in the system
Confirming that the temperature values were being logged correctly in the system, then calibrating them against the separately installed sensor's readings.
